Care and Handling
Keep the scallops cool, 34 F, moist but not wet (cover with a wet towel); do not place them in direct contact with ice. It is okay if the shells are open, this does not mean the scallops are dead. Unlike other shellfish, scallops open when they are removed from the water. However, if they are not properly cared for they will dry out.

As this goes to press, Binkert is late with his opening after a fire closed the plant. This is the first time in more than 25 years that we will not be carrying his products for Oktoberfest. MARKET INFORMATION AND INSIGHTS
Beef:

Beef and cattle prices have been trading lower in recent weeks, packers are unloading  higher than usual inventories. Beef prices, in general, will stabilize though early October before rising once again. Cattle feeders are through the peak supplies, and availability will decline through November. At the same time, the percentage of cattle grading Choice and CAB will decline during the coming months. We anticipate ribs and tenders to be very high for the holidays .

Veal:

Veal pricing is trading steady with a few items firm to higher for the approaching Kosher and Columbus Day market.

Pork:

Pork remains steady in price but there is also a downward trend in the loin market. Butts and hams are also lower by a few cents and there is no real major demand to push the market up.

Lamb:

Steady  to trading lower on some cuts, very good quality. Australian racks in short supply and higher price.

Game:

Game is always in demand as the fall season gets underway. As predicted Venison will be more expensive than last year. Rabbits, Pheasants and Guinea hens will be in good supply as well as Squab and Poussin.

Poultry:

Expect a weak market. Boneless breast will drop and level off in the middle of the month. Wing will be strong; dark meat could drop as also whole birds. In essence the professionals have a hard time predicting  the poultry market. We had a lot of interest with our Certified Organic whole chicken.

Seafood:

 This is the last month of this year’s hurricane season. Let’s hope it is calm seas ahead for the next 31 days. Maryland rockfish remains open but they are the only ones. Expect small 2-4# whole fish only with occasional larger fish possible. Alaskan Halibut season winding down with higher than ever prices getting ready for next month’s closure until next spring.

Atlantic salmon prices steady with smaller sizes being the bargain. Chilean Sea Bass will just keep on climbing in price as long as the demand remains so strong. Make domestic shell on white shrimp your choice this month. Inventories are better and so are the prices.
